The recipe calls for a “A pinch of happiness”

I will start off with a disclaimer — I don’t believe in measurements (unless it’s baking of course). As a scientist I spend my entire day worrying about measurements down to the nanogram and the kitchen is my escape. My measurements in the kitchen revolve around what tastes right, what feels right and what looks right ( I call it the “by eye” method — a Greek philosophy). I will share my successful recipes (and challenges) in the kitchen but it will be up to you to make a judgement call if it needs an extra pinch of salt, or indeed a pinch of happiness.

Whilst cooking is wonderful, when I am in a terrible mood you will be able to taste it in my food — spicy, heavy, possible charring of vegetables involved. However, put on my favourite song and you can see me relax as I carefully stir a risotto and give it all the love it deserves. So “a pinch of happiness” is my motto and unless you have that in the kitchen, what are you there for?
